FLAVOUR IS A FRONTIERNatoora Sanlúcar Sweet Melon- We source sweet and aromatic Galia from a cooperative in Sanlúcar de Barrameda, Cadiz – an area renowned for its melons.- There’s a century-old tradition here of growing melons in a particular fashion. The soil is sandy and high in salt, and growers practise minimal irrigation with saline water. In this environment, the plants are forced to reach deep into the soil to draw on nutrients. - The growers train their melons up trellises, a method that allows for better pruning and precise harvesting, now a rare practice among commercial growers.- The effort is palpable: the melons have full-bodied flavour in dense, undiluted flesh. Each is harvested at perfect ripeness, attractively cut with its long stalk still attached.Take it further- Toss chilled melon cubes with lime zest, flaky salt, and a pinch of smoked paprika or Tajín.- Wrap wedges with Serrano ham, drizzle with aged balsamic.- Grill thick slices, serve with burrata and pistachio crumb.Natoora' radical approach to seasonal sourcing is shaping the future of food- We are revolutionising the food system. - We work direct with growers who value flavour, biodiversity and heritage over yield. - We give them the support they need to build a better future for food, rooted in small scale, sustainable agriculture that gives back to our planet.
